Two weeks ago my sweetheart Julie and I drove south out of Idaho Falls in a storm of rain mixed with snow. We had the heater/defroster going all the way past Provo, Utah. When we finally stopped in St. George, Utah, we stepped out of the car into summer weather. It was magical.

About 15 years ago, we had the opportunity to visit Okefenokee Swamp National Wildlife Refuge in Georgia. Although the swamp was mostly stripped of its signature cypress trees over 100 years ago, it is recovering, and we got to boat among some pretty impressive wetlands, although I didn’t think of them as wetlands at the time. To me, wetlands had cattails and bulrushes and sedges, not giant trees. What little I knew, even that far into my career.

It’s especially delicious dipped into the clam broth from the next dish. Definitely take leftovers home if you can’t finish it. 🌊 Dabob Bay Manila Clam Served with a refreshing touch of lemon, garlic, and parsley, these clams are light and not too salty. You can dip them in the side serving of seasoned oil, and the broth is perfect for soaking up with the bread. A great dish for multiple tastes. 🎣 Alaska Lingcod 'n Chips A must-try North American Fish & Chips, the fish is tender and flavorful. The accompanying salad, my favorite, is sweet and tart, perfect with tartar sauce. While it’s similar to other seafood places, the fish here feels slightly more tender. 🍝 Oregon Coast Shrimp Fettuccine As a pasta lover, I had to order this, but the shrimp were smaller than expected, almost too tiny to notice. You’re better off with the Dungeness Crab & Shrimp Fettuccine, which I alternate with this dish but always seem to forget to skip the tiny shrimp. The crab version is very creamy but a bit greasy, needing something like a cola to cut through the richness. However, the flavor and texture are delightful, especially the bits of crab meat. 🥣 Clam Chowder (White) Honestly, this dish is stunning. The chowder is rich, not just filled with clams, potatoes, and onions. I prefer it to Ivar’s Chowder, although I can’t quite remember all the spices used. 🐟 Blue Plate Special This one's a bit ordinary, I’d skip, but the fried red potatoes are incredibly delicious. 🐠 Pan Fried Fresh Idaho Rainbow Trout On the Tonight’s Feature Menu, this dish is excellent. The trout is fried to perfection, very flavorful without being oily or dry. 😳 3 Quick Tips: 1. Plenty of seats inside, head over around 5 PM on a Saturday—you won’t have to worry about waiting too long or finding a parking spot. 2.
