    Ingredients:

    • 2 lbs boneless, skinless chicken breast
    • 1 medium onion, chopped
    • 1 cup diced carrots
    • 8 oz baby bella mushrooms, chopped
    • 2 tbsp butter, melted
    • 4 cups chicken broth
    • 1 box (6 oz) wild rice with seasoning mix
    • 2 cups heavy cream
    • 1/2-1 tsp kosher salt
    • Optional: 1 tbsp cornstarch, for thickening

    Instructions:

    1. Combine the chopped onion, carrots, and baby bella mushrooms with the melted butter in your slow cooker. Add the chicken breasts, chicken broth, and wild rice with its seasoning packet. Stir everything together to ensure the broth and seasonings are evenly distributed.
    2. Cook on high for 3 hours or on low for 4 hours.
    3. Once the chicken is fully cooked, carefully remove it from the pot and chop it into bite-sized pieces. Return the chicken to the slow cooker, then gradually stir in the heavy cream. Season with 1/2 tsp of kosher salt, tasting and adding up to 1/2 tsp more if needed.
    4. For a thicker soup, mix 1 cup of the broth with the cornstarch until smooth, then stir it back into the soup. Continue cooking for an additional 30 minutes to allow the soup to thicken.
    5. Give the soup a final stir, serve hot, and enjoy the comforting goodness!

    Recipe Tips:

    • Feel free to use different cuts of chicken like thighs or tenderloins; just adjust the cooking time accordingly.
    • Leftovers keep well in an airtight container for 3-4 days in the fridge or can be frozen for up to a month.

This hearty and flavorful soup is perfect for cozy evenings, and it’s so easy to prepare that you’ll find yourself making it again and again!
