    Ingredients:

    • 4 tablespoons unsalted butter
    • 1 large carrot, peeled and grated

    • 5 garlic cloves, minced
    • 2 pounds ground beef
    • 1 cup ketchup
    • 2 tablespoons brown sugar
    • 2 teaspoons chili powder
    • 1 teaspoon mustard powder
    • 2 cups beef broth
    • 2 tablespoons tomato paste
    • 2 tablespoons Worcestershire sauce
    • 2 boxes (8.5 oz each) cornbread mix
    • 2 large eggs
    • 2/3 cup milk

    Instructions:

    1. Preheat the Oven: Set your oven to 375°F.
    2. Cook the Vegetables: Melt 2 tablespoons of butter in a large skillet or Dutch oven over medium-high heat. Add the grated carrot, diced bell pepper, onion, and minced garlic. Sauté the vegetables until they soften, about 4-5 minutes.
    3. Brown the Beef: Add the ground beef to the skillet and cook until browned, breaking it up as it cooks. If there’s excess fat, drain some off.
    4. Prepare the Sauce: Stir in the ketchup, brown sugar, chili powder, mustard powder, beef broth, tomato paste, and Worcestershire sauce. Mix well and bring to a simmer. Season with salt and pepper to taste.
    5. Assemble the Casserole: Pour the sloppy joe mixture into a 9×13-inch baking dish.
    6. Prepare the Cornbread Topping: In a separate bowl, whisk together the cornbread mix, eggs, and milk until smooth. Spread the cornbread batter evenly over the top of the sloppy joe mixture.
