    • 1 lb lean ground beef
    • 1 medium onion, diced

    • 1 (14.5 oz) can diced tomatoes with green chiles, drained
    • 1 (15 oz) can black beans, drained and rinsed
    • ¾ cup sour cream
    • 1 (9 oz) bag of nacho cheese chips (substitute with any flavor tortilla chips you prefer)
    • 3 ½ cups shredded cheddar or Monterey Jack cheese blend
    • Extra toppings: sour cream, salsa, diced green onions, and hot sauce

    Instructions:

    1. Preheat the oven to 350°F and lightly grease a 9x13 baking dish.
    2. In a large skillet over medium heat, brown the ground beef, breaking it apart as it cooks. Once browned, drain off any excess fat.
    3. Add in the onion and bell pepper, cooking for about 3-4 minutes until the onion softens.
    4. Stir in the taco seasoning and broth. Let the mixture simmer for 5-6 minutes, allowing it to thicken.
    5. Mix in the diced tomatoes with green chiles, black beans, and sour cream, then remove from heat.
    6. Slightly crush about 1 cup of tortilla chips and spread them evenly across the bottom of the prepared baking dish.
    7. Layer half of the beef mixture on top of the crushed chips, followed by another layer of chips and half of the shredded cheese.
    8. Add the remaining beef mixture, then top with the rest of the chips and cheese.
    9. Bake for 25-30 minutes until the cheese is bubbling and golden brown.
    10. Serve hot, and garnish with sour cream, salsa, green onions, and hot sauce if desired.

    Substitutions:

    • You can switch out the ground beef for ground turkey or chicken if you prefer a lighter option.
    • If you don’t have Mexican blend cheese, a mix of cheddar and Monterey Jack works just as well.
    • Feel free to substitute the black beans with pinto or kidney beans.

    Storage:

    Store any leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven or microwave until warmed through. If you’re looking to freeze, wrap the casserole tightly in plastic wrap and aluminum foil before baking, then freeze for up to 2 months.
