    Ingredients:

    • 7 oz elbow macaroni or your favorite short pasta
    • 6 tablespoons unsalted butter
    • 1/4 cup flour
    • 2 cups heavy cream
    • 1/4 teaspoon celery seed
    • 1/2 teaspoon garlic powder
    • Salt and black pepper, to taste
    • 1 tablespoon dried minced onion
    • 1/2 cup whole milk
    • 6 oz sharp cheddar cheese, shredded
    • 6 oz American cheese, cubed
    • 1 cup sour cream
    • Optional: Chopped green onions or crispy bacon for garnish

    Directions:

    1. Preheat the oven to 350°F. Cook the pasta in salted boiling water until al dente. Drain and set aside.
    2. In a medium saucepan, melt the butter over medium heat. Add the flour, whisking constantly until golden, about 1 minute. Gradually whisk in the heavy cream, celery seed, garlic powder, salt, and pepper. Continue stirring until the mixture thickens.
    3. Remove from heat and stir in the milk, cheddar cheese, American cheese, and sour cream until smooth and fully melted.
    4. Combine the cooked pasta with the cheesy sauce in a 9"x13" baking dish. Stir well to coat the pasta. Bake for 20-25 minutes, or until the top is lightly browned and bubbling.
    5. For an extra pop of flavor, garnish with chopped green onions or crispy bacon before serving.

    Substitutions:

    • Pasta: Feel free to use rotini, penne, or shells if you don’t have elbow macaroni.
    • Cheese: Swap out sharp cheddar for gouda, Monterey Jack, or your favorite melting cheese.
    • Sour Cream: Replace sour cream with Greek yogurt for a lighter version.

    Storage:

Refrigerate leftovers in an airtight container for up to 4 days. Reheat in the oven or microwave, adding a splash of milk to maintain creaminess. For longer storage, freeze for up to 2 months in a freezer-safe container. Thaw overnight before reheating.
