    Ingredients:

    • 2 1/2 cups all-purpose flour
    • 3 teaspoons baking powder
    • 1 teaspoon sugar
    • 1/2 teaspoon fine sea salt
    • 6 tablespoons cold butter, cut into cubes
    • 1 cup + 2 tablespoons buttermilk
    • 4 slices of bacon, cooked and crumbled
    • 1 small jalapeño, seeds removed and finely chopped
    • 4 oz cream cheese, cubed and frozen

    Preparation:

    1. Preheat your oven to 385°F and line two baking sheets with parchment paper.
    2. In a large bowl, combine the flour, baking powder, sugar, and salt.
    3. Using a pastry cutter or your fingers, work the butter into the flour mixture until it resembles coarse crumbs.
    4. Pour the buttermilk into the center of the mixture and stir until just combined.
    5. Fold in the bacon, jalapeño, and cream cheese, reserving a small portion for topping.
    6. Using an ice cream scoop or spoon, drop portions of dough onto the prepared baking sheets. Add the reserved bacon, jalapeños, and cream cheese on top of each biscuit.
    7. Bake for 11 to 13 minutes, or until the biscuits are golden on the bottom. Serve warm and enjoy!

    Substitutions: If you’re looking for a lighter option, swap out the bacon for turkey bacon or even omit it for a vegetarian version. Don’t have buttermilk on hand? Create a quick alternative by adding a tablespoon of lemon juice or vinegar to regular milk and letting it sit for five minutes. Want to adjust the heat? Try using a mild pepper like poblano instead of jalapeños.

    Storage Directions: Store any leftover biscuits in an airtight container at room temperature for up to two days. For longer storage, place them in the fridge for up to a week. You can also freeze the biscuits in a sealed container for up to three months—just thaw and reheat in the oven at 350°F for about 10 minutes.
