    Ingredients

    • 4 tablespoons unsalted butter, divided
    • 1/3 cup all-purpose flour
    • 4 cups milk, divided
    • 3/4 teaspoon sea salt
    • 1/2 teaspoon freshly ground black pepper
    • 1 teaspoon garlic powder
    • 1 (1 oz) packet ranch dressing mix
    • 3 cups fresh broccoli florets
    • 3 cups cooked rice
    • 3 cups shredded rotisserie chicken
    • 1 1/2 cups (6 oz) shredded sharp cheddar cheese
    • 2 tablespoons hot sauce, plus additional for serving
    • 1/2 cup panko breadcrumbs

    Preparation

    1. Preheat your oven to 400°F (200°C).
    2. In a large saucepan, melt 2 tablespoons of butter over medium heat. Whisk in the flour and cook for 1-2 minutes until it takes on a light golden hue. Gradually whisk in 3 cups of milk, stirring constantly. Bring to a gentle boil and let it simmer for about 3 minutes until the mixture thickens, stirring frequently. Add in the salt, pepper, garlic powder, and ranch dressing mix, mixing until combined.
    3. Add the broccoli florets to the sauce and cook for 2 minutes, just until the broccoli turns a vibrant green. Transfer this mixture to a greased 9”x13” baking dish.
    4. Stir in the cooked rice, shredded chicken, cheese, and hot sauce until everything is evenly coated. In a small bowl, melt the remaining butter and use it to drizzle over the panko breadcrumbs. Sprinkle the breadcrumb mixture evenly over the casserole.
    5. Bake for 15 minutes or until the cheese bubbles and melts. Then, switch your oven to broil on low and broil for an additional 2 minutes, or until the topping is golden and crispy.
    6. Allow the casserole to cool for about 5 minutes before serving. Add extra hot sauce on top for those who like it spicy!

    Substitutions

    • Chicken: Swap the rotisserie chicken for leftover grilled chicken or turkey for a different flavor.
