    Ingredients:

    ½ cup softened butter

    • 1 ⅔ cups granulated sugar
    • 2 eggs
    • 1 ½ teaspoons vanilla extract
    • 1 ½ cups all-purpose flour
    • 1 teaspoon baking soda
    • 1 teaspoon salt
    • 1 ½ teaspoons ground cinnamon
    • ½ teaspoon ground nutmeg
    • 3 cups peeled and diced apples (about 2 large apples)
    • Optional: ¼ cup chopped pecans or walnuts

    For the caramel:

    • 1 ⅓ cups packed brown sugar
    • 2 tablespoons heavy cream or whole milk
    • 4 tablespoons unsalted butter

    Directions:

Preheat your oven to 350°F (175°C) and grease a 9-inch springform pan thoroughly.

    1. Prepare the dry ingredients: In a small bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
    2. Mix the batter: In a large bowl, cream together the butter and sugar until well-combined. Add the eggs one at a time, mixing thoroughly after each addition. Stir in the vanilla extract.
    3. Combine and fold: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in the diced apples and nuts, if using.
    4. Bake the cake: Pour the batter into the greased springform pan and bake for 35-40 minutes. While the cake bakes, start on the caramel.
    5. Make the caramel: In a small saucepan, combine the brown sugar, cream, and butter. Heat on medium-low, stirring frequently, until the mixture is smooth and well-melted. There's no need to boil it, just ensure everything is fully mixed.
    6. Add the caramel topping: After the cake has been baking for about 30 minutes, remove it from the oven and pour the caramel evenly over the top. Return the cake to the oven for an additional 10-15 minutes, until the caramel sets and the cake is cooked through.
    7. Cool and serve: Allow the cake to cool for at least 15 minutes before slicing and serving. Enjoy the warm, gooey caramel and spiced apple goodness.

    Substitutions:

    • Apples: Swap out apples for pears or even peaches for a twist on this classic dessert.
    • Nuts: For a nut-free option, skip the pecans or walnuts, or try adding dried cranberries or raisins for extra sweetness.
    • Dairy-free: Use a vegan butter and a dairy-free milk like almond or oat for a completely dairy-free version.

    Storage:

Store this apple cake in an airtight container at room temperature for up to two days. For longer storage, refrigerate it, where it will stay fresh for up to five days. To reheat, pop individual slices in the microwave for about 15-20 seconds to enjoy that fresh-out-of-the-oven warmth.
