    • 4 cups white sugar
    • 1 cup full-fat whipping cream
    • 2 ½ cups finely shredded or desiccated coconut
    • 1 ½ teaspoons coconut flavoring
    • A few drops of pink gel food coloring

    Instructions

    1. Line an 8x8-inch baking dish with parchment paper and set it aside.
    2. In a large pot, stir together the sugar and cream over low heat until the sugar fully dissolves.
    3. Turn the heat up to medium and bring the mixture to a boil, stirring occasionally. Allow it to boil for 5 minutes, watching carefully to prevent any splattering.
    4. Remove the pot from the heat after the 5 minutes. Stir in the shredded coconut and coconut flavoring until well combined.
    5. Pour half of the mixture into the prepared dish and refrigerate for about 10 minutes.
    6. While that layer sets, mix the pink food coloring into the remaining coconut mixture until the color is evenly blended.
    7. Place the saucepan back on the stove (turned off but still warm) to keep the mixture from hardening.
    8. Once the first layer has firmed up slightly, pour the pink mixture on top and smooth it out evenly.
    9. Let the entire dish set in the fridge for 3 to 4 hours. Once fully firm, cut into squares and enjoy!

    • For a dairy-free version, swap out the heavy cream for canned coconut cream.
