Ingredients
For the cookies:
1/2 cup softened butter (unsalted)
1/3 cup white sugar
1 cup brown sugar, packed
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
1 teaspoon allspice or mixed spice
1 large egg
2 tablespoons apple cider or fresh apple juice
1/2 teaspoon baking powder
2 cups all-purpose flour
1 cup peeled, finely chopped apple
1 cup chopped pecans or walnuts
For the optional glaze:
1 cup powdered sugar
3 tablespoons apple cider or juice
A pinch of ground cinnamon or nutmeg for sprinkling
Instructions
Prepare the Dough: Preheat your oven to 375°F (190°C). In a large mixing bowl, beat the softened butter with the granulated and brown sugars until creamy and fluffy. Mix in the vanilla extract, cinnamon, allspice, egg, and apple cider until well combined.
Combine Dry Ingredients: In a separate bowl, sift together the flour and baking powder. Gradually fold the dry mixture into the wet ingredients until just combined. Gently stir in the chopped apples and nuts until evenly distributed throughout the dough.
Shape the Cookies: Drop spoonfuls of dough (about a teaspoon each) onto a baking sheet lined with parchment paper, leaving about 2 inches of space between cookies. Bake for 10-12 minutes or until the edges are golden brown.
Cool: Let the cookies rest on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Add the Glaze (optional): Once the cookies are completely cooled, whisk together the powdered sugar and apple cider to create a smooth glaze. Drizzle it over the cookies and sprinkle with a dash of cinnamon or nutmeg for an extra touch of warmth.
Substitutions
Butter: Swap with coconut oil or a dairy-free butter substitute if you prefer a non-dairy option.
Nuts: If you're not a fan of pecans or walnuts, try using chopped almonds or omit them altogether for a nut-free version.
Apple Juice: Feel free to use orange juice if you’re out of apple juice for a slightly different twist.
Storage Tips
These cookies store well in an airtight container at room temperature for up to 4 days. To keep them fresh longer, freeze the cookies (without glaze) for up to 2 months. Defrost at room temperature and add the glaze right before serving for best results.
