    • 1 lb box small pasta, such as elbow or shells, cooked and cooled
    • ½ small red onion, diced
    • 4 scallions, chopped
    • 1 red bell pepper, diced
    • 1 cup grape tomatoes, halved
    • 1 ½ cups corn (fresh, canned, or frozen)
    • 1 jalapeno, finely chopped
    • 2 ripe avocados, diced
    • 1 large cucumber, diced
    • 1 (15 oz) can kidney beans, drained and rinsed
    • 1 (15 oz) can black beans, drained and rinsed
    • 1 cup queso fresco, crumbled (or substitute feta)

    Ingredients for the Dressing:

    • 1 cup Greek yogurt or mayonnaise
    • 2 tablespoons fresh lime juice
    • 2 tablespoons apple cider vinegar
    • 1 teaspoon ground cumin
    • 2 teaspoons smoked paprika
    • 2 teaspoons kosher salt
    • 1 teaspoon cracked black pepper

    Directions:

    1. In a large mixing bowl, toss together the cooked pasta, veggies, beans, and cheese.
    2. In a smaller bowl, whisk the yogurt (or mayo), lime juice, vinegar, and spices until smooth.
    3. Pour the dressing over the pasta mixture and toss until everything is well coated.
