    Ingredients:

    • 1 pack (20 count) of your favorite frozen taquitos
    • 1 small can (4 oz) of chopped green chilies
    • 1 can (16 oz) of refried beans
    • 1 large jar (20 oz) of enchilada sauce
    • 2 cups of shredded cheddar or a Mexican cheese blend

    Optional toppings:

    • Sour cream
    • Sliced black olives
    • Chopped green onions
    • Fresh cilantro
    • Diced tomatoes

    Directions:

    1. Preheat your oven to 400°F and lightly grease a 9x13-inch baking dish.
    2. Spread the refried beans evenly across the bottom of the dish, then sprinkle the green chilies on top.
    3. Arrange the taquitos in a single layer over the bean mixture. If needed, you can alternate the direction of a few taquitos to make sure they fit.
    4. Pour the enchilada sauce evenly over the taquitos, covering them completely.
    5. Bake in the oven for 20 minutes.
    6. Remove from the oven, sprinkle the shredded cheese over the top, and bake for an additional 10 minutes, or until the cheese is fully melted and bubbly.
    7. Serve hot with your choice of toppings and dig in!

    Substitutions:

    • Taquitos: Try chicken, beef, or bean-filled taquitos depending on your preference.
    • Enchilada sauce: For a smoky twist, use a green enchilada sauce or even salsa verde.
    • Cheese: Switch it up with pepper jack or Monterey Jack for added flavor.

    Storage Tips:

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven at 350°F until warm, or microwave individual servings for a quicker option.

Enjoy this easy-to-make meal without the hassle of rolling tortillas—just bake, serve, and savor!
