    • 1 lb package phyllo dough, thawed
    • 1 cup unsalted butter, melted
    • 1 cup whole milk
    • 2 large eggs
    • 1 cup white sugar
    • 1 tablespoon vanilla extract
    • 1 teaspoon almond extract
    • 1 teaspoon ground cinnamon (substitute for cardamom if preferred)

    Syrup:

    • 1 cup granulated sugar
    • 1 cup water
    • 1 teaspoon vanilla extract

    Instructions

    1. Preheat your oven to 350°F and grease a 9x13-inch baking pan.
    2. Working with two sheets of phyllo at a time, wrinkle each into loose folds and arrange them side by side in the prepared pan. Continue this process with all the dough, ensuring the folds fill the pan evenly.
    3. Place the dough in the oven and bake for 10 minutes.
    4. After 10 minutes, remove from the oven and pour the melted butter evenly over the folded dough. Return to the oven and bake for another 10 minutes until golden and crisp.
    5. While the dough bakes, whisk together the milk, eggs, sugar, vanilla extract, almond extract, and cinnamon in a medium bowl until smooth.
    6. Once the phyllo is done baking, pour the milk mixture evenly over the top and return to the oven. Bake for an additional 30-35 minutes until the custard is set and the top turns golden brown.
    7. As the cake bakes, prepare the syrup. In a small saucepan, combine sugar and water over medium heat, stirring until the sugar dissolves. Let it simmer for about 10 minutes until slightly thickened. Remove from heat and stir in the vanilla.
    8. When the cake is done, drizzle the warm syrup over the entire surface. Let it cool completely before cutting into slices and serving.

    Substitutions:

    • Phyllo Dough: If you're out of phyllo, you can substitute puff pastry for a slightly different texture.
    • Cardamom: For a flavor twist, replace cardamom with cinnamon or nutmeg.
    • Dairy-Free: Swap the butter for dairy-free margarine and the milk for almond or oat milk to make this dessert dairy-free.

    Store any leftovers in an airtight container at room temperature for up to two days, or refrigerate for up to five days. To refresh the crispiness, reheat in a 300°F oven for 5-10 minutes.
