    Ingredients
    Crust:

    • 2 cups all-purpose flour
    • 1 cup packed brown sugar
    • 1 teaspoon salt
    • 1 cup melted butter (2 sticks)

    Filling:

    • 1/2 cup all-purpose flour
    • 1 (14 oz) can sweetened condensed milk
    • 2 tablespoons granulated sugar
    • 3 large eggs
    • 1/4 cup melted butter
    • 2 teaspoons vanilla extract
    • 1 teaspoon salt
    • 3 cups sweetened shredded coconut
    • 1 cup sweetened shredded coconut, for topping

    Directions

    1. Preheat your oven to 350°F and lightly grease a 9x13-inch baking dish.
    2. In a medium bowl, combine all crust ingredients, stirring until it comes together as a dough. Press this dough into the bottom of the greased baking dish to form an even layer.
    3. Bake the crust for about 13-15 minutes or until it takes on a golden hue.
    4. While the crust bakes, prepare the filling. In a large mixing bowl, combine all of the filling ingredients, excluding the 1 cup of coconut for topping. Mix until smooth.
    5. Pour the filling mixture over the baked crust and spread it evenly. Sprinkle the remaining shredded coconut on top to give it a nice toasty finish.
    6. Place the baking dish back in the oven and bake for another 25-30 minutes, or until the filling sets and the coconut topping turns golden brown.
    7. Allow the bars to cool completely before cutting into squares.

    Substitutions

    • For a dairy-free version, replace the butter with your favorite plant-based alternative.
    • Swap the sweetened shredded coconut with unsweetened if you prefer less sweetness.
    • Use gluten-free flour if you need a gluten-free option.

    Storage
