    Ingredients:

    • 1/2 lb fresh strawberries, hulled and chopped
    • 1 (3 oz) box of strawberry-flavored gelatin mix
    • 1 large ripe banana, mashed
    • 1/2 cup butter, softened
    • 1 cup granulated sugar
    • 2 large eggs
    • 4 tablespoons sour cream
    • 1 teaspoon vanilla extract
    • 1 3/4 cups all-purpose flour
    • 1 teaspoon baking powder
    • 1/4 teaspoon salt
    • 1/8 teaspoon baking soda

    Instructions:

    1. Preheat your oven to 350°F. Use a food processor to blend the strawberries with the gelatin mix until smooth. Combine this mixture with the mashed banana in a medium bowl.
    2. In a separate large bowl, cream the butter and sugar together using an electric mixer until light and fluffy. Add the eggs, sour cream, and vanilla extract, then beat until well blended. Stir in the strawberry-banana mixture.
    3. In another bowl, whisk together the flour, baking powder, salt, and baking soda. Gradually add this dry mixture to the wet ingredients, mixing until everything is just combined—be careful not to overmix.
    4. Pour the batter into a greased 8”x4 1/2” loaf pan and smooth the top. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
    5. Allow the bread to cool in the pan for 30-60 minutes before transferring it to a wire rack to cool completely. Slice and enjoy!

    Substitutions:

    • You can easily swap out the strawberries for raspberries or mixed berries for a different flavor profile.
    • Replace the sour cream with Greek yogurt for a slightly tangier taste while keeping the bread moist.
    • For a lighter version, try using margarine or coconut oil in place of butter.
