    Growing Sweet Potatoes in Florida: A Summer Delight for Families

    Florida’s warm, sunny climate offers the perfect conditions for growing sweet potatoes, a versatile and nutritious vegetable that thrives during the summer months. Gardening can be a wonderful family activity, and growing sweet potatoes in Florida is a simple and rewarding project that even young children can participate in.

    I’m so excited to share a delicious recipe for a one-pan kale and sweet potato hash that’s perfect for your next harvest!

    Why Grow Sweet Potatoes?

    Sweet potatoes are not only delicious, but also packed with vitamins A and C, making them a healthy addition to any meal. They are relatively low-maintenance, require minimal space and can be grown in the ground or in large containers, making them ideal for any size garden.

    Scrappy Kitchen Tip: You can start your own sweet potato slips using sweet potatoes bought from the grocery store.

    One-Pan Kale and Sweet Potato Hash

    After harvesting, one great way to enjoy your homegrown sweet potatoes is by making a hearty kale and sweet potato hash. This recipe is simple, nutritious and delicious—and perfect for getting the kids involved in the kitchen (and the garden!).

    Ingredients:

    • 2 medium sweet potatoes, diced
    • 1 red bell pepper, diced
    • 1 yellow onion, diced
    • 1 cup sliced mushrooms
    • 2 cups chopped kale
    • 1 cup broccolini
    • 1 can chickpeas, drained and rinsed
    • 2 cloves garlic, minced
    • 1 tbsp olive oil
    • Italian seasoning or your favorite seasonings
    • Salt and pepper to taste

    Instructions:

    1. In a large skillet, heat the olive oil over medium-low heat. Add diced sweet potatoes and cook for about 7-8 minutes until they begin to soften.
    2. Add diced onion and sauté until translucent.
    3. Add red bell pepper, broccolini and mushrooms to the skillet. Cook for about 5 minutes until vegetables are tender.
    4. Stir in garlic and chickpeas, cooking until garlic is fragrant.
    5. Mix in chopped kale and cook until wilted.
    6. Season with your favorite seasonings, including Italian seasonings, salt and pepper.
    7. Serve hot and enjoy this flavorful dish made with your very own sweet potatoes!
