    Ingredients:

    • 2 cups old-fashioned rolled oats
    • 1/2 teaspoon salt
    • 1 teaspoon ground cinnamon
    • 1 cup almond butter (or peanut butter)
    • 1/4 cup pure maple syrup (or honey)
    • 1/3 cup apple butter (or applesauce)
    • 1 large banana, mashed
    • 1/2 cup dried cranberries
    • 1/2 cup pepitas (pumpkin seeds)
    • 1/2 cup raisins
    • 1/4 cup ground flaxseed (optional)

    Instructions:

    1. Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
    2. Mix Dry Ingredients: In a large bowl, combine the oats, salt, and cinnamon.
    3. Mix Wet Ingredients: In another bowl, mix the almond butter, maple syrup, apple butter, and mashed banana until well combined.
    4. Combine Mixtures: Add the wet ingredients to the dry ingredients and stir until fully incorporated. Fold in the dried cranberries, pepitas, raisins, and ground flaxseed if using.
    5. Form Cookies: Scoop out about 1/4 cup of dough per cookie and place them on the prepared baking sheet. Flatten each cookie slightly with the back of a spoon.
    6. Bake: Bake for 15-18 minutes, or until the edges are lightly browned. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

    Tips:

    • Storage: Store the cookies in an airtight container at room temperature for up to 5 days, or freeze them for longer storage.
    • Variations: Feel free to add other mix-ins like chocolate chips, shredded coconut, or chopped nuts for extra flavor and texture.
    • Customization: You can substitute the almond butter with any nut or seed butter of your choice, and the dried fruits can be swapped with your favorites.

    Conclusion:

Breakfast cookies are a convenient and healthy option for busy mornings or as a nutritious snack throughout the day. They are easy to make, customizable, and packed with wholesome ingredients that provide energy and satisfaction. Whether you’re rushing out the door or enjoying a leisurely morning, these breakfast cookies are sure to become a staple in your kitchen. Enjoy the delicious taste and the health benefits of these homemade treats!

    Happy baking! 🍪🌞

Oats spike your glycemic index and are usually loaded with aflatoxins and mycotoxins as is peanut butter. Not so great for the gut biome.
