    Ingredients:

    • For the Broth:
      • 2 large onions, halved
      • 4-inch piece of ginger, sliced in half lengthwise
      • 4 quarts beef broth
      • 1 pound beef bones (marrow and knuckle bones)
      • 1/4 cup fish sauce
      • 1 tablespoon sugar
      • 4 star anise
      • 2 cinnamon sticks
      • 4 cloves
      • 1 tablespoon coriander seeds
    • For the Pho:
      • 1 pound sirloin steak, thinly sliced
      • 1 pound flat rice noodles
      • 1 cup bean sprouts
      • 1 bunch fresh cilantro
      • 1 bunch fresh Thai basil
      • 2 limes, cut into wedges
      • 2-3 fresh chili peppers, sliced
      • Hoisin sauce and Sriracha, for serving

    Instructions:

    1. Char the Aromatics:
      • Place the halved onions and ginger on a baking sheet. Broil in the oven until they are charred, about 5-10 minutes. This step adds depth to the broth.
    2. Prepare the Broth:
      • In a large pot, combine the charred onions and ginger, beef broth, beef bones, fish sauce, sugar, star anise, cinnamon sticks, cloves, and coriander seeds. Bring to a boil, then reduce the heat and simmer for at least 3 hours. Skim off any foam that rises to the surface.
    3. Cook the Noodles:
      • While the broth is simmering, cook the rice noodles according to the package instructions. Drain and set aside.
    4. Prepare the Beef:
      • Thinly slice the sirloin steak. To make slicing easier, you can freeze the steak for about 15 minutes before slicing.
    5. Assemble the Pho:
      • Strain the broth to remove the solids and return the clear broth to the pot. Bring the broth back to a simmer.
      • Divide the cooked noodles among serving bowls. Top with slices of raw sirloin steak.
      • Ladle the hot broth over the noodles and beef. The heat from the broth will cook the thin slices of beef.
    6. Garnish and Serve:
      • Garnish each bowl with bean sprouts, cilantro, Thai basil, lime wedges, and sliced chili peppers. Serve with hoisin sauce and Sriracha on the side.

    Conclusion:

Beef Pho is a delightful and aromatic dish that brings the flavors of Vietnam to your kitchen. The rich, flavorful broth combined with tender beef and fresh herbs creates a comforting and satisfying meal. Whether you’re making it for a special occasion or a cozy night in, this Beef Pho recipe is sure to impress. Enjoy the process of making and savoring this delicious soup!

I use eye of round, I'll freeze it about 3/4 of the way then slice it on a mandolin slicer since I'm too cheap to buy a good meat slicer.

Also; it's pronounced "fuh?". Call it "Foe" though because that's what is expected.
