    Ingredients

    • 3 tablespoons vegetable oil
    • 2 tablespoons all-purpose flour (or gluten-free flour blend)
    • 1/4 cup chili powder
    • 1 tablespoon ground cumin
    • 1/2 teaspoon dried oregano
    • 2 cups low-sodium beef broth (or vegetable broth for a vegetarian option)
    • 2 1/2 cups tomato sauce
    • 1 clove garlic, minced
    • Salt to taste

    Instructions

    1. Prepare the Roux: In a medium saucepan, heat the vegetable oil over medium heat. Add the flour and whisk continuously for about 1-2 minutes until it forms a smooth paste and turns a light golden color.
    2. Add Spices: Stir in the chili powder, ground cumin, and dried oregano. Cook for another minute, allowing the spices to become fragrant.
    3. Incorporate Liquids: Gradually add the beef broth, whisking constantly to prevent lumps. Then, add the tomato sauce and minced garlic. Stir well to combine.
    4. Simmer: Bring the mixture to a simmer over medium-low heat. Let it cook for about 15 minutes, stirring occasionally, until the sauce thickens to your desired consistency.
    5. Season: Taste the sauce and add salt as needed. If you prefer a smoother sauce, you can blend it using an immersion blender.

    Conclusion

This homemade enchilada sauce is not only easy to make but also packed with authentic Mexican flavors. It’s perfect for making enchiladas, but don’t stop there! Use it to spice up your tacos, and burritos, or even as a flavorful base for soups and stews. The best part? You can make a double batch and freeze half for later, ensuring you always have this delicious sauce on hand.

I make mine close to this recipe. I cook a chuck roast in my crock pot. Use the broth from that. Don't use tomato sauce. and it's delicious. Shredded beef enchiladas. Lots of cheese please.
