That might mean lamb speck and boar salami cured in-house, smoked trout shaved over Clark Street rye, or grilled sausages that audibly pop when cut. You’ll see dates in hand-stitched denim splitting a $52 wagyu steak that’d cost double at a fancy steakhouse. If your server suggests a shot of lemon and biodynamic olive oil for dessert, go with it.
