    Markets score 60 red points. Here are Thurston food safety inspections for Sept. 25

    Comments are taken directly from the latest Thurston County Public Health and Social Services (PHSS) inspection reports, which are available for each food establishment, at the Thurston County Environmental Health Office and their website .     Reading inspection scores:

    • Attention should be given to the type of violation (red versus blue) and whether the establishment has a history of red violations or repeat violations.
    • Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Example: not keeping food at the right temperature.
    • Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Example: a worn floor that needs replacing.
    • If red points exceed 45, the county will require a reinspection within 10 business days. A reinspection also is required if total red and blue points exceed 65.
    • If red points exceed 100 and there’s a lack of managerial control, the county will shut down the establishment for at least 72 hours. The establishment may reopen after management and employees complete retraining and demonstrate corrective action during a reinspection.
    • Some common abbreviations: PHF/TCS is potentially hazardous food/time control for safety; RTE is ready to eat; PIC is person in charge; FWC is food worker card; CDI is corrected during inspection.

    Comments:

    • The person in charge did not demonstrate active managerial control and knowledge of cold holding requirements.
    • Cut produce was not properly washed before being cut.
    • TCS foods in refrigeration were not at or below 41 degrees as required.
    • Unit thermometers were not functioning properly.
    • The facility’s activities, such as food preparation, exceeded their permit. The facility was instructed to submit a risk category change form.
    • Some in-house items and repackaged items did not have labels.
    • A sanitizer solution was not prepared at the time of the inspection.
    • The produce area counters were in disrepair.
    • A food prep sink was dirty.

    Meat Market

    Sept. 11: 30 red points; 28 blue points.

    Comments:

    • The person in charge lacked knowledge of cold-holding temperature requirements and did not perform duties to maintain active managerial control of risk factors.
    • Food contact surfaces were improperly cleaned. A meat grinder was dirty with visible food debris. A meat saw was not properly washed and rinsed.
    • Unit thermometers were inaccurate and food thermometers were not used to measure internal temperatures.
    • Pig ears were observed thawing on a shelf at room temperature.
    • A self-serve seafood cooler lacked a guard or cover to prevent potential contamination.
    • The handles of in-use utensils were in contact with food.
    • A ware-washing sink was being used for food prep.
    • There was no food prep sink in the meat department.
    • Shelves were not at least 6 inches off the ground. A walk-in cold hold and freezer had excessive food debris. Card board was observed being used as surfaces throughout the facility.

    Comments:

    • Active managerial control was absent.
    • Both food worker cards on site were expired.
    • An employee did not wash their hands as required.
    • A cutting board that was used with raw meat was not rinsed or sanitized.
    • Multiple chemical bottles were not properly labeled.
    • Fish appeared to be thawing in stagnant water.
    • There was a gap under a door.
    • Test strips were not available to test an in-use sanitizer solution.

    Sept. 11: 5 red points; 2 blue points.

    Comments:

    • Ground raw product was stored above whole/cut raw meat. Raw meats must be stored according to their cooking temperatures.
    • The south ceiling had water damage.

    Panda Express

    4210 Martin Way E, Olympia

    Sept. 11: 50 red points; 0 blue points.

    Comments:

    • Cooked rice was observed cooling in covered 2-inch-deep pans in the walk-in cold hold at the time of inspection.
    • Teriyaki Chicken was hot held at 110-146 degrees on the serve line. Hot held TCS foods must be at or above 135 degrees.

    Comments:

    • Garlic in an oil mixture was stored at room temperature.

    Comments:

    • Workers did not have food worker cards at the time of inspection.
    • The facility lacked a hand-wash sink.

    Comments:

    • Half and half, Peets coffee and a hard-boiled egg were above 41 degrees in a cold hold unit.

    • An employee reportedly did not wash their hands before donning gloves to handle food products.

    Sept. 11: 15 red points; 10 blue points.

    Comments:

    • Two food worker cards were expired.
    • The hand-wash sinks at the bus station and the bar area were not equipped with disposable paper towels.
    • Boxes of beef steaks were stored on the freezer floor. Food items must be stored at least 6 inches off the ground.

    Buzz’s Bar and Grill

    Sept. 17: 15 red points; 5 blue points.

    Comments:

    • Coleslaw was held at 45 degrees. Cold held TCS foods must be at or below 41 degrees.
    • The menu lacked asterisks next to food items that can be cooked to order.
    • Sanitizer test strips were absent during the inspection.

    Comments:
