    Ingredients

    Focaccia Dough

    • 3 ¾ cup gluten-free bread flour
    • 1 tsp baking powder
    • 2 tsp kosher salt
    • 2 tsp instant yeast
    • 1 cup hot water 110°F
    • 1 cup unflavored sparkling water
    • 3 tbsp olive oil plus an additional 2 tbsp for greasing the pan
    • 2 tsp honey
    • ½ tsp ground cinnamon
    • 1 ½ cups apple pie filling

    Topping

    • 2 cups powdered sugar
    • 2-3 tbsp milk

    Instructions

    • Prepare the Yeast Mixture: In a small bowl, add the hot water, honey, and yeast. Mix for a few seconds and set aside for 5 minutes to bubble.
    • Mix Dry Ingredients: In a large mixing bowl, add the flour, baking powder, and salt. Mix well.
    • Combine Wet and Dry Ingredients: Create a well in the center of the flour mixture. Add 3 tbsp of olive oil, sparkling water, and the yeast mixture. Mix until incorporated. The dough will be very sticky and lumpy.
    • Prepare the Baking Dish: Using 2 tbsp of olive oil, oil a 9×13 metal baking dish with 2” sides. Line the dish with parchment paper, allowing it to come up on the two sides for easier removal of the focaccia later.
    • Spread the Dough: Place the dough in the prepared pan and spread it out evenly. Add tablespoons of apple pie filling all over the focaccia.
    • Let the Dough Rise: Cover the pan with saran wrap, top with a towel, and set aside until the dough triples in size (approximately 1 hour).
    • Bake: Preheat your oven to 425°F. Once the dough has risen, bake for 25-30 minutes until golden brown. Remove from the oven and allow to cool completely before cutting.
    • Prepare the Topping: In a bowl, mix together the powdered sugar and milk until the mixture is drizzly. If needed, add more milk to achieve the desired consistency. Pour over the entire loaf.
