A regional breakfast chain that started in Independence, Missouri, 24 years ago then spread all over Kansas City is coming to Wichita.

The Big Biscuit , which has nearly 30 locations in Kansas, Missouri, Oklahoma and Arkansas, will open its first Wichita restaurant at 2330 N. Maize Road. That’s the spot where a long string of Mexican restaurants has opened and closed during recent years — the most recent of which was Las Catrinas, which closed in December .

The Big Biscuit website now lists the Wichita address under a “coming soon” banner. I’ve reached out to representatives for The Big Biscuit and will update this post if I get more specific details.

Alex Ibarra of Weigand Commercial Real Estate and Bree Russell with Russell Real Resources represented the property owner in the lease of the space, which has around 3,700 square feet.

The Big Biscuit is a Kansas City-area favorite that serves a big menu of breakfast dishes including biscuits and gravy, omelets, pancakes, benedicts, waffles, french toast and breakfast sandwiches. It also serves lunch items like salads, burgers, sandwiches and fried chicken strips.

Aside from its big biscuits, it’s known for dishes like cinnamon roll pancakes and a brunch burger, topped with an over-easy egg, hash browns, chopped bacon, cheddar, lettuce, tomato, pickle, onion and mayo and served on a brioche bun.

Most locations of The Big Biscuit are open from 6:30 a.m. to 2:30 p.m. daily.

The first Big Biscuit was opened in 2000 by Dan Gerson, who’d previously owned a business in Independence called Mrs. A’s Roadside Cafe.

I’ll let you know if I get more information about a possible timeline for the Wichita restaurant’s arrival.
