    This Creamy Chicken Fajita Soup recipe combines all the flavors of classic fajitas in a creamy, comforting soup that is perfect any night of the week. Loaded with tender chicken, onions, peppers, and more….this easy to make soup is family approved and a recipe that you definitely don’t want to pass up!

    I don’t know about you, but I love soup! In fact, I am a “soup year round” type of person, but nothing beats a warm bowl on a cold evening. So many different varieties to make from classic Chicken Noodle Soup, to Creamy Chicken Pot Pie Soup, and even Chicken Tortilla Soup! I love combining my love of Mexican food with soup since you get the best of both worlds. This easy Chicken Fajita Soup is fun to load with all your favorite toppings to make it your own!

    INGREDIENTS FOR MAKING THE BEST CREAMY CHICKEN FAJITA SOUP

    • Chicken- boneless skinless chicken breasts cooked and shredded using two forks, or to save time, you can use Rotisserie chicken
    • Onion- I typically use a white onion and dice it up, however, feel free to use whatever type you have on hand
    • Green Pepper- remove seeds and dice it up, you can also use orange, yellow, or red bell peppers in this delicious soup
    • Garlic- fresh, minced garlic
    • Butter- I use unsalted to control the salt amounts a bit, this is used to sauté the vegetables and make them tender
    • Cream Cheese- allow the cream cheese to soften so it is easier to combine into the soup
    • Diced Tomatoes- Rotel is best for this soup as its a mixture of both diced tomatoes and green chiles. I use mild, but you can use any type
    • Chicken Broth- look for low sodium chicken broth if possible
    • Heavy Whipping Cream- you can also use half and half if you have that on hand, this adds the creaminess to the soup
    • Fajita Seasoning- if you don’t have any on hand, taco seasoning works too
    • Toppings- see options below, have fun with this as it adds lots of flavor and fun to your meal

    OPTIONAL TOPPINGS/ ADD IN’S

    The fun part about this soup recipe is the toppings. I love to serve ours with lots of options and each bowl ends up completely different. Here are some of our go to favorites:

    • Crushed Tortilla Chips
    • Sour Cream
    • Sliced Avocado
    • Jalapeno Slices
    • Shredded Cheese (Mexican, Cheddar Cheese, Pepper Jack, etc.)
    • Cilantro
    • Diced Tomatoes
    • Black Olives
    • Corn
    • Black Beans/ Pinto Beans
    • Tortilla Strips
    • Fresh Lime Juice
    • You can enhance the flavor even more using chili powder, onion powder, garlic powder, cumin, paprika, red pepper flakes, Oregano, etc.

    HOW TO MAKE CREAMY FAJITA SOUP

    1. In a large pot, melt the butter over medium-high heat.
    2. Add in the onion, garlic, and green pepper and allow to simmer for about 3 minutes.
    3. Add the cream cheese to the pot and mash around a bit to incorporate.
    4. Pour in the diced tomatoes (and juice from can), chicken broth, heavy cream, and fajita seasoning. Stir to combine.
    5. Lower heat and simmer for about 20 minutes.
    6. Add in the cooked, shredded chicken and stir.
    7. Serve with toppings of choice.

    HOW TO STORE EASY CREAMY CHICKEN FAJITA SOUP

    • Allow leftovers to fully cool before storing in an airtight container.
    • Store in refrigerator up to 5 days.
    • Soup can be frozen up to 3 months.
    • To reheat, place leftovers in microwave or reheat using the stove top until heated through.

    This soup is a meal in itself; however, my family loves to have a few things to choose from on their plates. Here are some simple, yet delicious ideas:

    HOW CAN I MAKE THIS SOUP IN THE SLOW COOKER?

    This can easily be adapted for the slow cooker. To do so, simply add all the ingredients to your crockpot and cook on low for about 5-6 hours, or high for about 2-3 hours. This is a great way to make this into a slow cooker chicken fajita soup that is perfect to serve at parties or gatherings and keep warm for longer.

    CAN I FREEZE THIS RECIPE FOR CHICKEN FAJITA SOUP?

    Absolutely! In fact, it is the perfect freezer meal. Simply allow to fully cool before placing in a freeze safe container up to 3 months. Allow to defrost and reheat over the stove or in the microwave.

    HOW DO I MAKE THIS SOUP HEALTHY?

    This soup is Keto diet friendly already, and to keep it low carb/ gluten-free, simply control the toppings and omit the tortilla chips or serving with warm tortillas. So many great ways for this soup to fit into any diet.

    Ingredients Needed

    • 1 lb boneless chicken, cooked/shredded *you can use rotisserie chicken to save time
    • 1 onion, diced
    • 1 green pepper, diced
    • 4 garlic cloves, minced
    • 1 tablespoon butter
    • 6 oz cream cheese, softened
    • 20 oz diced tomatoes w/ green chilies *I used 2 cans mild Rotel
    • 2 1/2 cups chicken broth
    • 1/2 cup whipping cream
    • 1 packet fajita seasoning *you can use taco seasoning if preferred
    • toppings of choice: sour cream, shredded cheese, cilantro, avocado, etc
