    This Hearty Chicken Stew has a flavorful broth, comes together in no time, and includes tender chicken, potatoes, and veggies in an incredible cream sauce!

    With colder weather here, nothing tastes better than a bowl of warm soup or some hearty stews. Well, this simple chicken stew recipe is a bit thicker than soup, but this delicious meal still warms you up and has incredible, extra flavor!

    A few nights ago, I was looking for a dinner that I could prepare ahead of time. With after school activities, I knew I needed something that could be enjoyed quickly but stick with us. After browsing through my refrigerator and pantry, I found lots of fresh veggies, some extra potatoes, and a loaf of French bread on hand. Since I absolutely love my Dutch Oven, I decided to go the soup/stew route!

    After dicing the veggies, sautéing the chicken, and adding all the seasonings to the pot, this stew came together in no time and was packed with so much flavor! I was able to make this ahead of time and simply warm back up come dinnertime. We even had enough leftovers to enjoy for lunch the next day.

    Whether you choose to enjoy this with some warm crusty bread, a side salad, or on its own, this will be one meal that the whole family will enjoy!

    Hearty Chicken Stew Ingredients

    • Butter
    • Chicken breasts
    • Italian seasoning
    • Salt
    • Black Pepper
    • Olive oil
    • Garlic cloves
    • Onion
    • Red potatoes
    • Baby carrots
    • Celery
    • Green beans
    • Cream of chicken soup
    • Milk
    • Sour cream
    • Dry ranch mix

    Hearty Chicken Stew Directions

    1. Add the butter to your Dutch Oven (or soup pot) and melt butter over medium heat.
    2. Add diced chicken and season with the Italian seasoning, salt, and pepper.
    3. Allow to cook on medium-high heat until the chicken is no longer pink. Remove from the pot and set aside.
    4. Add the olive oil to the pot and heat over medium.
    5. Add in the garlic, onion, potatoes, carrots, celery, and green beans.
    6. Sauté for about 5 minutes, or until veggies soften a bit.
    7. In a small bowl, combine the cream of chicken soup, milk, sour cream, and ranch mix.
    8. Pour mixture into soup pot and stir to combine.
    9. Reduce heat to low and allow mixture to simmer for about 45 minutes, or until potatoes are tender.
    10. Add chicken into the pot and stir to combine.
    11. Serve and enjoy your homemade chicken stew!

    Alternative Ingredients

    Once you’ve made this recipe once, you can allow yourself to get creative in the kitchen the next time you make it again. Here are a few ingredients you can use to substitute or add if you’re feeling like getting crafty!

    • Bay leaf (or other fresh herbs like thyme sprigs)
    • Various root vegetables of your choice
    • Russet potatoes or baby potatoes
    • Heavy cream (this is often used as a thickening agent if you’re looking for a creamier soup or stew base)
