    This delicious Snickerdoodle Apple Bread combines the flavors of snickerdoodle cookies and fresh apples in a warm and comforting quick bread. Moist and full of cinnamon-sugar flavor, this apple cinnamon bread is the perfect anytime treat!

    One of my favorite things to make during the Fall season are quick breads. Not only do they come together quickly, but there are so many flavor variations to enjoy!

    Apple Snickerdoodle Loaf Ingredient Notes

    This apple bread starts out using simple pantry staples and adds in diced apples throughout. You may already have everything needed on hand! Below are some notes about each ingredient and some alternative options.

    • Salt/ Baking Powder– once combined, this gives the bread it’s rise and adds to the texture. Be sure to use fresh baking powder. *PRO TIP: I change my baking powder and baking soda out every 6 months to ensure freshness.
    • Flour– you’ll want to use all purpose flour in this recipe.
    • Butter– I use unsalted since salt is added, allow to soften before starting to prepare the bread.
    • Sugar– you’ll use both light brown sugar and white granulated sugar in this recipe. These give the bread it’s overall sweetness.
    • Cinnamon– this brings all the cozy Fall vibes to the bread. Feel free to add in some cloves, nutmeg, ginger, apple pie spice, etc.
    • Eggs– you’ll need 2 large eggs for this recipe, let them get to room temperature so they combine into the batter easier.
    • Vanilla Extract– use pure vanilla extract versus imitation for the best flavor addition.
    • Milk– any type of milk works, I use 2% since that is what we keep on hand.
    • Apple– you’ll need one apple, I love using Granny Smith apples, but any baking apples will work perfectly. Be sure to peel, core, and dice the apple before beginning.

    Variations

    • Add in 1/2 cup chopped nuts or raisins.
    • Pour a powdered sugar glaze on top, caramel drizzle, or a cream cheese frosting.
    • Some additional add in’s are chocolate chips, cranberries, dried fruit, different flavored chips from cinnamon to butterscotch.
    • Make this bread into muffins, mini loaves, or one large loaf.

    How to make Snickerdoodle Apple Bread

    1. Preheat oven to 350 degrees F.
    2. In a medium bowl, combine the salt, baking powder, and flour. Set aside.
    3. In a separate mixing bowl, cream together the butter, brown sugar, white sugar, and cinnamon until combined. Add in the eggs and vanilla.
    4. Slowly alternate adding the flour mixture and milk into the creamed mixture until all has been combined. Fold in the apples.
    5. Grease 4 mini loaf pans or 1 large loaf pan with cooking spray and evenly distribute the batter into prepared pans.
    6. In a small bowl, combine the 2 tablespoon sugar and 1 teaspoon cinnamon. Sprinkle mixture evenly on top of the batter.
    7. Place in oven and bake for about 30 minutes if using mini pans or about 55-65 minutes if using large loaf pan. Use a toothpick to check if baked through.
    8. Remove from oven once baked and allow to cool on a wire rack for about 5 minutes prior to removing from pans.

    Best Apples to use in Baking

    When it comes to apples, there are so many options. Believe it or not, every apple is NOT the same and some are preferred over others for baking goods. Here are some great tips on what to look for and which ones are the better additions:

    • Opt for firmer apples instead of soft, squishy apples. These hold up better when baked in the oven.
    • Apple pies are great for using a more tart apple, however, for this recipe, you want a sweet apple.
    • My go-to apples are granny smith, Gala, or Honey-crisp.

    Recipe Tips for Success

    • Make sure the eggs and butter are at room temperature before making the bread. This helps everything to combine easier and avoids the potential of over-mixing.
    • Keep an eye on the cinnamon sugar topping about halfway through. If you notice it browning too fast, cover the pan with aluminum foil for the remainder of cook time.
    • To prevent the apples from sinking, you can coat them with 1 tablespoon flour just as you would if using blueberries.
    • The best pan for this bread is a light metal pan. Dark metal tends to scorch the bread and glass doesn’t cook as evenly.
    • Ensure accuracy when measuring the flour as if you add too much, it will cause your bread to be dry.
    • If you prefer a crumb topping, add in some cold butter with your cinnamon sugar mixture and use a pastry blender to make coarse crumbs before sprinkling on top.

    Storing this Apple Snickerdoodle Recipe

    • Once fully cooled, store in an airtight container or storage bag at room temperature for up to 3 days.
    • If refrigerating, you can store up to 5 days.
    • To freeze, place bread in freezer safe container or bags for up to 3 months. Defrost to room temperature before serving.
    • Reheat in the microwave if you prefer your bread warmed up.
