    • Bacon– chopped
    • Butter– I use unsalted butter to control the sodium levels
    • Onion– diced
    • Carrots– diced
    • Celery– diced
    • Garlic Cloves– minced
    • Flour– all purpose
    • Chicken Broth– you can also use chicken stock if you have it on hand, try to use low sodium chicken broth if possible to control salt levels
    • Chicken Bouillon Cube
    • Thyme
    • Bay Leaf
    • Salt/ Ground Black Pepper– to taste
    • Russet Potatoes– peeled and diced into small cubes, Yukon Gold Potatoes work great in this recipe too
    • Chicken Breast– boneless skinless chicken breasts work best but chicken thighs are great too, cooked and cut into small cubes
    • Heavy Cream– this adds the creaminess to the soup, you can also use half and half if desired

    1. In a large pot or large Dutch oven, cook bacon until crispy.
    2. Remove to paper towel lined plate and keep about ¼ cup pan drippings in pot.
    3. Add butter and melt.
    4. Saute onions, carrots, celery, and garlic for about 5 minutes.
    5. Sprinkle flour over vegetables and whisk for about 2-3 minutes. Remove pot from heat and slowly whisk in the chicken broth until smooth.
    6. Return pot over medium heat and add in the bouillon cube, thyme, bay leaf, salt, pepper, and potatoes.
