    Loaded Avocados Stuffed With Eggs

    Avocados are loaded with nutrients and are an absolute powerhouse! Packed with heart-healthy fats, potassium, fiber, and other nutrients, these are a great start to your day. Add in eggs, cheese, and of course bacon, you have a protein filled recipe that everyone will devour.

    When my hubby first made these for me a few years back, I was hesitant as he assembled them. My first thought was “warm avocado”? No thanks, right?! WRONG! One bite in and these quickly changed my mind and became one of my most favorite breakfasts to enjoy.

    How to tell an avocado is ripe

    If the avocado yields to firm gentle pressure you know it’s ripe and ready-to-eat. Ripe, ready to eat avocados may have a darker color but color can vary so it is best to go by feel as well as color. It will feel lightly soft but it will not feel “mushy” to the touch.

    Ingredients Needed for Breakfast Stuffed Avocados

    • Avocado- pitted and sliced in half
    • Eggs
    • Cheese- shredded, I use Cheddar, but feel free to use what you have on hand
    • Bacon- cooked/crumbled
    • Seasoning- any seasoning you desire, salt/pepper

    How to make Breakfast Scramble Stuffed Avocados

    1. Remove pit from avocado and scoop a small amount of avocado out of its shell to make room for egg.
    2. Place avocado into a skillet. Crack egg into each avocado half.
    3. Sprinkle with desired seasoning.
    4. Toss the shredded cheese and crumbled bacon on top of the uncooked egg.
    5. Place skillet onto grill grates and cook for about 15-20 minutes, or until egg is cooked and cheese has melted. *Use high heat on smoker/grill. If making over stove, use medium high heat.

    Tips for best results

    • Use room temperature avocados, not refrigerated.
    • Scoop out about a tablespoon of avocado to allow room for the egg. Scoop wide rather than deep to ensure eggs bake evenly.
    • Feel free to add your own toppings to these! Bell peppers, onions, hot sauce, mushrooms, cooked sausage, etc.
    • Make sure your avocados are ripe as they will be easier to slice and enjoy!
    • Use large eggs, not extra large to avoid overflow.
    • Use large avocados and make sure the avocados are ripe and fresh.

    Can You Make Egg Stuffed Avocados Ahead Of Time?

    Unfortunately, this recipe is best when it is made fresh! The eggs and avocado recipe is pretty quick though! To save on time, you can precook and crumble the bacon to have it ready to go when needed!
