This easy Sheet Pan Chicken Fajitas recipe is perfect for a quick and delicious dinner. Simply toss all the ingredients onto a sheet pan and let the oven do the work. A flavorful and convenient meal the whole family will love.
Don’t you just love an easy, flavor packed dinner idea? These Chicken Sheet Pan Fajitas are a big hit in my house because they allow everyone to load up their favorite toppings, the prep work can be done earlier in the day, and clean up is a breeze! These are perfect to make on busy weeknights, for a meal train option, or even to prepare as a quick lunch to enjoy during the week.
Sheet Pan Fajitas Ingredient Notes
Below is a brief overview of the simple ingredients needed.
Chicken– you will want to use boneless skinless chicken breasts cut into slices. It’s best to slice the chicken against the grain so that it’s tender, not chewy
Onion– I used a large yellow onion and cut it into thin slices. White onions work too.
Peppers– any color bell peppers work, we love using all different colors to make these a bit more visually appealing. Feel free to add extra peppers if you like lots of veggies on your plate.
Oil– I use avocado oil, however, vegetable oil or olive oil works great too.
Lime– you’ll need the lime juice from one large lime.
Tortillas– I love using flour tortillas, however, corn tortillas work great too, or you can enjoy the meat and vegetables on their own/ in lettuce wraps.
Seasoning– store bought or homemade fajita seasoning (see recipe below) works great.
How to make this Chicken Fajitas Sheet Pan recipe
Preheat the oven to 425°F.
Cut the bell peppers into ½-inch slices and add them to the baking sheet.
Cut the onion into thin slices and add them to the sheet.
Cut the chicken into ½-inch to 1-inch thick strips and add them to the sheet.
Add the oil and fajita seasoning to the baking sheet. Toss with your hands until everything is well coated, then spread into an even layer. It’s okay if chicken pieces are on top of the vegetables.
Place in the oven and bake for 10 minutes. Remove from the oven, toss everything, and return to the oven for another 10 to 15 minutes, or until the chicken is cooked.
Remove from the oven and squeeze the fresh lime juice over the fajitas. Heat the tortillas in the microwave in 30-second intervals until warmed.
Serve in the warmed tortillas and enjoy.
How to make Homemade Fajita Seasoning
This simple recipe comes together quickly and allows you to control the amounts of each ingredient added. Simply combine the ingredients below in a small bowl.
1 tablespoon chili powder
1 1/2 teaspoon paprika
1 1/2 teaspoon cumin
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 teaspoon dried Oregano
1/4 teaspoon Cayenne pepper
Salt and Pepper to taste.

Diced Avocado or Tomatoes

Shredded Cheese (my favorite is Cotija Cheese)

Make Ahead and Storage Instructions
Store leftovers in the refrigerator for 2-3 days and reheat in the microwave. If freezing leftovers, place in a freezer safe container for up to 3 months. Allow to thaw before reheating.
Making Ahead: Slice all of the veggies and cut the chicken and store separately in the refrigerator until ready to bake. Make the seasoning up to several days in advance and store it in a jar at room temperature.
To freeze, season the chicken and vegetables with fajita seasoning. Place in a freeze safe bag and place in a freezer up to 3 months. Thaw in fridge and place on cookie sheet to cook as directed once thawed.
