    Cheesy Chicken Spaghetti is one of those classic dinner recipes perfect for any occasion! Simple to make, hearty, and family approved! From the tender pasta, shredded chicken, and incredible Tex Mex sauce, its hard to stop at just one serving! This “stick to your ribs” meal is perfect served with some Garlic Cheese Crescents or Garlic Parmesan Pull Apart Bread!

    Ingredients Needed for Cheesy Mexican Chicken Spaghetti

    • Pasta– I use Angel Hair Pasta and have found it works the best. Of course, you can use Spaghetti noodles too though
    • Chicken– cooked and shredded or diced. I keep cooked chicken in my freezer for meals like this, but Rotisserie chicken works great too
    • Cream of Chicken Soup– since this has a lot of salt in it already, no additional salt is needed in this recipe
    • Salsa– I use a medium, chunky salsa, however, you can also use a can of Rotel tomatoes if desired
    • Sour Cream– this brings the creaminess to the casserole. You can also use plain Greek yogurt if you don’t have salsa on hand
    • Mexican Cheese– shredded, you can also use Colby Jack, Pepper-jack, Cheddar cheese, etc.
    • Taco Seasoning– either one packet, or use my homemade recipe for an easy peasy option

    Variations

    • Chop Bell Peppers and Onions and add to the pasta mixture prior to cooking.
    • Add in some diced jalapenos.
    • Pour some hot sauce on top just prior to serving.
    • Black olives or mushrooms are great additions to the topping or to add into the casserole.
    • Use cream of mushroom soup in place of the cream of chicken soup

    How to make Mexican Chicken Spaghetti

    1. Preheat oven to 350 degrees and grease a 9×13 inch baking dish with cooking spray.
    2. Boil pasta according to package directions on box. Drain water.
    3. Stir the cooked pasta, chicken, cream of chicken, salsa, sour cream, 1 cup cheese, and taco seasoning in a bowl.
    4. Pour pasta mixture into prepared baking dish.
    5. Sprinkle remaining 1/2 cup cheese evenly on top.
    6. Cover dish with aluminum foil.
    7. Place pan into oven and cook about 25 minutes. Remove from oven and serve!

Perhaps pair this pasta with some fluffy, homemade biscuits, or cheesy garlic bread! If you want to keep the Tex Mex vibe going, you can also make a skillet of Loaded Cornbread or some refried beans.

    How to store leftover Cheesy Mexican Chicken Spaghetti

    With so many way to store this casserole, here are the best ways to ensure freshness.

    • Refrigerator: store leftovers in an airtight container for up to 4 days.
    • Freezer: store leftovers in a freezer safe container for up to 2 months.
    • Freezer Meal: to make this into a freezer meal, prepare the casserole as directed but do not bake it. Cover is with saran plastic wrap followed by aluminum foil. Place casserole into the freezer for up to 2 months. Once ready to bake, allow to fully thaw and bake as directed.
    • Reheating Leftovers: place serving into microwave and heat until desired temperature is reached.

    Can raw chicken be used in this creamy chicken spaghetti casserole?

    Unfortunately, no! It won’t fully cook once combined with the other ingredients in the time directed and if you increase the time, it’ll dry out the casserole. To save on time, you can use canned chicken or Rotisserie chicken.

    What is the difference between this recipe and the classic chicken spaghetti recipe?

    The cheesy chicken spaghetti’s are the same, but this version includes salsa and taco seasoning to add a Mexican flair whereas the classic version is creamy and cheesy, but omits the seasoning/salsa.

    Can I add in some veggies to this casserole?

    Absolutely! I love chopping up bell peppers and onions and adding them in the pasta mixture before I place the casserole into the oven.

    Can I make this in a crock pot?

    Yes! Combine ingredients as directed in recipe and rather than placing in the oven, you will pour mixture into your slow cooker. Cook on low for about 4 hours or high for about 2 hours. Sprinkle some cheese on top and serve!
