    These rich and creamy Horseradish Mashed Potatoes make a great side dish to just about any protein! And they are not just for the holidays. Mashed potatoes are a year-round side dish. We even make them for BBQs. This recipe has a bit of a bite with the added zesty horseradish. The butter, sour cream, and rich heavy cream, makes them ultra creamy.

    To create the perfect horseradish mashed potatoes, you will need the following ingredients:

    Ingredients:

    • 2 pounds Yukon Gold or Russet potatoes
    • 1 garlic clove, minced
    • 1/3 cup heavy cream
    • 3 tablespoons unsalted butter - room temperature
    • 1/4 cup sour cream
    • 1 1/2 tablespoons prepared horseradish
    • 2 teaspoons Dijon mustard
    • kosher salt
    • fresh ground black pepper
    • minced chives, scallions or parsley for optional garnish

    Step-by-Step Instructions:

    Step 1: Prepare the Potatoes

    Peel the potatoes and cutting them into evenly sized chunks. This way they cook evenly. Place the potato pieces into a large pot and cover them with cold water. Add a pinch of salt to the water. Bring the water to a boil over medium-high heat, then reduce the heat and let it simmer until the potatoes are fork-tender, approximately 15-20 minutes.

    Step 2: Drain and Mash

    Once the potatoes are tender, drain them thoroughly and return them to the pot. Allow them to sit for a minute or two to let any excess moisture evaporate. Use a potato masher, ricer, or electric mixer and mashe the potatoes. For a smoother texture use a ricer or mixer. For more textured mashed potatoes use a potato masher.

    Step 3: Add Dairy and Horseradish

    Add the butter and incorporate it evenly. Slowly pour in the heavy cream and add the sour cream, mix well. Fold in the garlic, Dijon mustard, and horseradish.

    Step 4: Season and Serve

    Season the mashed potatoes with salt and black pepper. Garnish with fresh chives, chopped scallions or parsley. Serve hot and enjoy.

    A dab of horseradish is good on deviled eggs.

    Have used creamy horseradish and Roquefort in potatoes for years. Both work in mac and cheese also.
