    Making this peach mint vinaigrette is simple. You'll need a high-speed mixer to blend the flollowing ingredients: peach preserve, mint leaves, olive oil, white wine vinegar, lemon juice, Dijon mustard, shallots, salt, black and red crushed pepper.

    Measured Ingredients:

    • 3/4 cups light olive oil
    • 1/4 cup freshly squeezed lemon juice
    • 2 tablespoons white wine vinegar
    • 1-2 tablespoons peach preserve (depending on your sweet preference)
    • 1 teaspoon Dijon mustard (you can use any mustard you have on hand too)
    • 1 teaspoon chooped shallots (red or white onion will work as well)
    • 8-10 fresh mint leaves
    • 1/4 teaspoon salt and pepper (less or more depending on your preference)
    • 1/8 teaspoon red crushed pepper (optional for a little balanced spice)

    Steps to Prepare
