    • 2 ripe peaches
    • 4 cups of mixed greens (spring mix, spinach, arugula, and/or baby kale)
    • 1/4 cup of crumbled feta cheese
    • 8 ounces grape tomatoes
    • 2 baby cucumbers
    • 1/2 of a small shallot or red onion thinly sliced and pickled (optional)
    • Peach mint vinaigrette or your favorite salad dressing

    Step-by-Step Preparation
