    These are double chocolate zucchini muffins and they are amazing! Rich dark chocolate combined with shredded zucchini and melty chocolate chips makes for the ultimate snack this season. There is zero zucchini taste and we can't get enough of them!

    Ingredients:

    • 1 ½ cups all purpose flour
    • ½ cup unsweetened cocoa powder
    • 1 teaspoon baking powder
    • ½ teaspoon baking soda
    • ½ teaspoon salt
    • 2 large eggs
    • 1 cup granulated sugar
    • ½ cup full fat milk
    • ½ cup vegetable or light olive oil
    • 2 teaspoons pure vanilla extract
    • 1 ½ cups grated zucchini, squeezed and liquid drained
    • 1 ½ cups chocolate chips

    Recipe Notes: This recipes makes about 12 muffins.

    Directions:

    1. Start by preheating your oven to 375°F and lining a muffin tin with muffin liners.
    2. In a small bowl, mix together the flour, cocoa powder, baking powder, baking soda, and salt.
    3. In a larger bowl, beat the eggs and sugar together, then add in the milk, oil, and vanilla extract.
    4. Combine the dry ingredients with the wet ingredients until just mixed, then fold in the zucchini and chocolate chips.
    5. Scoop the batter into the muffin liners, filling them about three-quarters full.
    6. Bake for 18 to 22 minutes, or until a toothpick comes out clean from the center.
    7. Let them cool down a bit before enjoying them!
