    A fantastic one-pot meal that's a total winner! The barley simmers right alongside the chicken in the slow cooker.

    This dish combines robust barley and sweet green peas, capturing the essence of the simple flavors. It’s filling and comforting, yet it also brings a refreshing. It's a dish that can be made and enjoyed year-round.

    Ingredients:

    • 1 whole chicken (3 ½ to 4 pounds), cut into 10 pieces
    • Coarse salt and freshly ground pepper
    • 2 tablespoons olive oil
    • ⅔ cup pearl barley
    • 1 ½ cups low-sodium chicken broth
    • ¼ cup white wine
    • 1 medium yellow onion, thinly sliced
    • 4 garlic cloves, thinly sliced
    • 1 ½ cups frozen peas, thawed
    • 2 teaspoons chopped fresh tarragon

    Directions:

    Step 1: Start by seasoning the chicken with some salt and pepper. If you have a 5- to 6-quart slow cooker that can brown, heat up some oil and brown the chicken for about 8 to 10 minutes, then set it aside on a plate. If your slow cooker doesn’t have that browning feature, just take the skin off the chicken. Next, toss in the barley, broth, wine, onion, and garlic into the pot, and season everything with salt and pepper. Place the chicken on top, cover it up, and let it cook on low for about 2 hours until the chicken is fully cooked.

    Step 2: Once it’s done, mix in the peas and tarragon with the barley, adding a bit more salt and pepper to taste. Then, transfer everything to a serving platter, placing the chicken on a nice bed of barley, and you’re ready to serve!
