    Sweet potatoes are the ultimate fall veggie—their vibrant color and delicious taste totally remind us of harvest season.

    This recipe is from the cookbook Good Lookin' Cookin' by sisters Dolly Parton and Rachel Parton George. Rachel has a thing for topping her casserole with marshmallows, and honestly, you can't skip that part. She also sprinkles some pecans on top, which we think adds a fantastic flavor and makes it even more special.

    Ingredients you will need:

    • 1 stick butter, room temperature, plus more for greasing
    • 5 large sweet potatoes, peeled and quartered
    • 1/2 cup packed light brown sugar
    • 1 teaspoon vanilla extract
    • 1 teaspoon salt
    • 1 teaspoon ground cinnamon
    • 1/2 cup pecans
    • 2 cups miniature marshmallows

    How to make this sweet potato casserole:

    Get the oven ready and prep the pan:
    Start by preheating your oven to 350°F. Grease up a 9-by-13 inch baking dish with some butter.

    Cook the sweet potatoes:
    Chop up the sweet potatoes and toss them into a big pot, covering them with cold water. Bring it to a boil on high heat, then reduce to a gentle boil and let them cook until they're soft enough to poke with a fork, which should take about 20 minutes.

    Drain and mash the sweet potatoes:
    Once they're done, drain the potatoes in a colander and move them to a large bowl. Mix in the brown sugar, butter, vanilla, salt, and cinnamon, then mash everything together with a potato masher until it's all blended nicely.

    Put together the casserole and bake:
    Spoon the mashed sweet potato mix into your greased baking dish, smoothing out the top. Sprinkle the pecans on top, then layer on the marshmallows evenly. Cover it with foil and pop it in the oven for 20 minutes. After that, take off the foil and bake for another 5 minutes or so until the marshmallows turn a lovely golden brown.

    Cool it down before serving:
    Once it's out of the oven, let it sit for about 15 minutes to cool off before you dig in.
