Using store-bought gnocchi is a fantastic way to create quick and delicious vegetarian dinners that are satisfying. The high heat of the oven perfectly roasts the gnocchi, onions and the tomatoes, creating a flavorful dish. This recipe can be served on its own or as a side dish with your favorite protein.

    Ingredients You'll Need

To make this delicious sheet pan gnocchi, you will need:

    • 1 pound of store-bought gnocchi
    • 2 cups of cherry tomatoes, halved
    • 1 medium red onion, sliced (you can use white or yellow onion too)
    • 1/4 cup of olive oil
    • 1 tablespoon white wine vinegar
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • 1/4 teaspoon salt
    • 1/4 teaspoon freshly ground black pepper
    • Fresh basil for garnish
    • Fresh grated parmesan or Parmigiano-Reggiano cheese

RECIPE NOTES: You can add a little bit of red crushed pepper to this dish for some heat, it will be a great addition to those who prefer a little spice.

    Step-by-Step Cooking Instructions

Start by preheating your oven to 400°F (200°C).

In a large bowl whisk together the olive oil, vinegar, garlic powder, onion powder, salt and black pepper.

Add in the gnocchi, sliced red onion and halved cherry tomatoes to the bowl and mix until the gnocchi and tomatoes are coated in the dressing.

Spread the mixture in a single layer and place it in the oven. Bake for about 20-24 minutes, or until the gnocchi is golden and the tomatoes are roasted. After removing it from the oven, let it cool for a few minutes, then garnish with fresh basil and top with freshly grated cheese. Serve warm.
