    Quick and Easy Cream Cheese Chicken Enchiladas

    Summer is here which means it is time for some quick and easy dinner recipes that are great for your family or hosting guests. These cream cheese chicken enchiladas are not only delicious, they are affordable for any occasion and take less than 1 hour to prep and prepare.

    INGREDIENTS:

    • 8 oz. cream cheese, softened
    • 3 cups of cooked chicken, shredded
    • 1 can of enchilada sauce
    • 1 can of green chilies, diced
    • 1/4 cup of fresh cilantro, chopped
    • 1/2 teaspoon of ground cumin
    • 1/2 teaspoon of garlic powder
    • 1/2 teaspoon of onion powder
    • Pinch of cayenne pepper
    • 2 cups of sharp cheddar cheese, shredded
    • 10 flour tortillas

    DIRECTIONS:

    1. Preheat the oven to 350 degrees. In a large bowl, mix the cream cheese, shredded chicken, green chilies, cilantro, cumin, garlic powder, onion powder, cayenne pepper, and 1 cup of shredded cheese together.

    2. Spoon the chicken mixture onto each tortilla, roll up and place them seam side down in a greased 9 x 13 baking dish.

    3. Pour the enchilada sauce over the top of each tortilla, making sure they are all coated.

    4. Sprinkle the remaining shredded cheese on top.

    5. Bake for about 20 minutes until cheese is bubbly and melted.

    Serve and Enjoy!
