    Country Fried Chicken: Southern Delight

    Southern comfort food is some of the best there is and one of my favorites is country-fried chicken. It is a thin piece of chicken breast coated in a seasoned flour mixture, deep-fried to a golden brown then topped with a creamy pepper gravy. It is usually served with mashed potatoes for a mouth-watering, delicious anytime meal.

    INGREDIENTS:

    • 4 boneless, skinless chicken breasts
    • 3 cups all-purpose flour, divided
    • 2 teaspoons of black pepper
    • 2 teaspoons of salt
    • 2 cups buttermilk
    • 1 tablespoon Cajun seasoning
    • 1 large egg
    • 3 cups of vegetable oil
    • 3 cups of milk

    DIRECTIONS:

    1. Tenderize your chicken breasts, until thin.

    2. Add 2.5 cups of flour, half of the salt, pepper and cajun seasoning in a large mixing bowl.

    3. Mix the egg and buttermilk together, then wash the chicken into the mix.

    4. Coat both sides of the chicken breasts with the seasoned flour.

    5. Heat 2.5 cups of oil in a cast iron skillet until it starts to bubble up.

    6. Fry the chicken breasts until golden brown, flipping halfway during cooking.

    7. Remove chicken when done from skillet, drain on paper towel lined plate.

    8. Add the remaining oil in the skillet and whisk in 1/2 cup flour on low heat. Scrape the the bottom of the pan and mix in with gravy.

    9. Slowly stir in the milk and add the rest of the spices, mixing with whisk until blended smooth.

    10. Continue cooking the gravy until it has thickened, serve over chicken and mashed potatoes and enjoy!
