    Chicken Pot Pie Pasta: One-Pot Comfort Food

    Growing up, I absolutely loved chicken pot pies, the perfect anytime comfort food. As I got older, I found myself still craving them, but I didn't always have the time it took to properly make them. Fortunately, this recipe for chicken pot pie pasta is a quick and simple one-pot meal that is just as delicious without all the mess and work. It is absolutely perfect for dinner after a long day, taking less than 30 minutes to prepare, and because it is a one-pan recipe, clean-up is as easy as pie.

    INGREDIENTS:

    • 16 ounces of uncooked penne pasta
    • 2 cups of cooked chicken, shredded
    • 2 tablespoons of salted butter
    • 1 small onion, diced
    • 2 cloves of garlic, minced
    • 1 cup of mixed vegetables, frozen
    • 1/2 cup of celery, chopped
    • 1 cup of heavy whipping cream
    • 1 cup of low sodium chicken broth
    • 2 tablespoons of all-purpose flour
    • 1/2 teaspoon of poultry seasoning
    • Salt and black pepper to taste

    DIRECTIONS:

    • Cook the pasta until al dente.
    • Drain the pasta then set aside.
    • In a large skillet, melt the butter over medium heat.
    • Add the onion and cook until translucent, about 3-4 minutes.
    • Add the garlic and sauté for another minute.
    • Stir in the frozen vegetables and cook about 5 minutes, until tender.
    • Add the chicken to the skillet and stir to combine.
    • In a large mixing bowl, whisk together the broth and cream until smooth.
    • Pour the mix into the skillet.
    • Add in he seasoning, salt, and black pepper.
    • Stir and let it simmer for about 5 minutes.
    • Stir in the pasta and mix until combined
