    Crispy Parmesan Bacon Potatoes: Quick and Delicious Side Dish

    Looking for a quick and easy side dish? These oven roasted potatoes are a delicious way to add to your main course. They go well with either chicken or beef, but are also great just on their own too. Perfect for lunch, dinner or an anytime snack.

    Ingredients:

    • 1/2 lb. of bacon
    • 3.5 lbs of Yukon gold potatoes, quartered
    • 1/2 cup of shredded parmesan cheese
    • 2 cloves of garlic, minced
    • 3 tablespoons of olive oil
    • 1/2 teaspoon of black pepper
    • 1/4 teaspoon of salt
    • 1/4 cup fresh parsley, chopped

    Directions:

    • Preheat oven to 425 degrees.
    • Line a large baking sheet with aluminum foil and arrange the bacon in a single layer on the foil. Bake for 15-20 minutes, until crispy.
    • In a large mixing bowl, add the cut potatoes, oil and garlic and toss well.
    • Place the potatoes on the baking sheet in a single layer and sprinkle with the parmesan cheese, salt and pepper.
    • Roast the potatoes in the oven for about 10-15 minutes. Stir potatoes and roast for another 15-20 minutes, until they are crispy and golden brown.
    • Season the potatoes with a little more salt and pepper.
    • Crumble the cooked bacon on top of the potatoes.
    • Serve warm and enjoy!
