    Quick and Easy Funnel Cake Bites

    Fall is almost here, and it's my favorite time of year, not just because of the cooler weather but because of all the fall festivals. Beside the fun rides and music, nothing beats fair and festival food, especially funnel cakes and with this simple recipe, you can make some delicious funnel cake bites for you and your family any night of the week.

    Ingredients:

    • 2 cups of milk
    • 6 tablespoons of butter, melted
    • 2 tablespoons of sugar
    • 1 teaspoon of baking soda
    • A pinch of salt
    • 2 cups of flour
    • 2 teaspoons of vanilla
    • 1 egg

    Directions:

    • In a medium-sized bowl, mix the milk, egg, vanilla, and melted butter together.
    • Add in the salt, baking soda, and sugar, mixing until combined.
    • Slowly fold in the flour until the batter becomes smooth.
    • Pour the batter into a gallon-sized Ziplock bag and let sit for a few minutes.
    • Pour vegetable oil into a frying pan until it's about a half inch deep.
    • Heat the oil on high for about two minutes, then reduce to medium heat.
    • Test the oil by dropping a small bit of batter into it.
    • If bubbles form around the edges, the oil is ready. If not, turn the heat up a bit more.
    • Cut a small hole in the bottom corner of the Ziplock bag and drizzle the batter into the hot oil in 1 to 2 circles.
    • Cook until the bottom half of the batter is golden brown, then gently flip with a slotted spatula and cook until the other side is golden brown.
    • Place the funnel cake bites on paper towels to absorb excess grease, then sprinkle with powdered sugar.
    • Serve warm and enjoy!

    These always look so good, I haven’t had one in years, cause I’m really trying to watch my sugar intake because of neuropathy however, I used to ask for powdered sugar and cinnamon sugar.
