    Cheesy Bacon and Onion Soup: A Fall Delight

    Fall is almost here so it's time to break out those yummy soup and stew recipes that are perfect for this time of the year. This cheesy and delicious version of onion soup is one of my favorites. A quick and easy recipe for some ooey, gooey goodness perfect anytime on nice fall day.

    INGREDIENTS:

    • 3 tablespoons of butter
    • 4 cups of whole milk
    • 1 large sweet yellow onion, chopped
    • 1/2 teaspoon of salt
    • 1/2 teaspoon of black pepper
    • 4 sliced ofcooked bacon, crumbled
    • 2 cups of Monterey Jack cheese, shredded
    • 3 tablespoons of all-purpose flour
    • 1 cup of Parmesan cheese, shredded (for garnish)
    • 1 cup of seasoned salad croutons (for garnish)
    • 2 tablespoons of fresh chives (for garnish)

    DIRECTIONS:

    • In a large saucepan, add the butter and onion and saute' about 5 minutes.
    • Then stir in the flour, salt and pepper and whisk until blended.
    • Gradually stir in the milk and bring to a boil.
    • Stir well and cook the soup for a few minutes, until it has thickened.
    • Add in the cooked crumbled bacon
    • Stir in the Monterey Jack cheese until it has fully melted.
    • Serve topped with croutons, Parmesan cheese, chives and enjoy!
