    Directions:

    • Preheat the oven to 325 degrees.
    • Prepare the cheesecake crust: In a large mixing bowl, mix the graham cracker crumbs with half of sugar and melted butter together then firmly pack the mixture into the bottom of a springform pan creating a solid crust.
    • Prepare the cheesecake filling: In a large mixing bowl, whip the cream cheese and sugar together in a large bowl until smooth and creamy. Gradually add the eggs and mix thoroughly. Fold in the sour cream and vanilla extract, mix well.
    • Pour the cheesecake batter onto the crust, spreading evenly. Bake for about 50 to 55 minutes, until the center is set. Then allow the cheesecake to cool, then chill in the refrigerator for about 4 to 6 hours, allowing it to firm.
    • Prepare the chocolate topping: Over low heat, warm the heavy whipping cream in a small saucepan then add the chocolate chips, stirring continuously until melted, creating a smooth and creamy chocolate sauce.
    • Once the cheesecake has completely cooled down, pour the chocolate topping evenly over the entire cheesecake surface then put it back into the refrigerator until the chocolate sauce has set.
    • Once set... slice, serve and enjoy!!!
