    USDA: Sanitation Failures at Boar’s Head

    The United States Department of Agriculture's (USDA) Food Safety and Inspection Service (FSIS) documented multiple sanitation violations at the Boar’s Head Provisions Co. Inc. facility in New Castle, Indiana, according to a Noncompliance Report from the USDA Food Safety and Inspection Service Public Health Information System.

    These findings follow up on our previous story regarding the recall of ready-to-eat liverwurst and deli meats due to possible Listeria contamination, published on July 26, 2024.

    One of the most significant violations occurred on August 8, 2023, when inspectors found heavy meat buildup and discolored meat on a hydraulic pump, along with rust and meat particles on various pieces of machinery in the Stitch Pump department.

    These conditions created an unpleasant odor and indicated a failure to maintain sanitary equipment and workspaces, according to FSIS.

    In another serious incident on November 7, 2023, an inspector discovered that critical thermometer calibrations, essential for ensuring product safety, had not been conducted as required.

    This oversight raised concerns about the accuracy of temperature control during processing, which is vital for preventing foodborne illness, according to FSIS.

    The report also highlights additional issues, including the presence of mold-like substances in coolers, improper disposal of inedible products, and persistent condensation in production areas.

    These repeated sanitation failures suggest systemic problems in maintaining the necessary cleanliness and safety standards.

    Boar’s Head Provisions Co. Inc. has been formally notified of these violations, and corrective actions have been mandated.

    However, the recurrence of similar issues over the reporting period indicates ongoing challenges in adhering to federal food safety regulations, according to FSIS.
