    Carversteak, the upscale steakhouse at Resorts World Las Vegas, has elevated its culinary offerings with a brand-new vegan menu. Carver Road Hospitality's Corporate Chef Daniel Ontiveros designed the menu, emphasizing fresh, flavorful, and high-quality ingredients. This addition solidifies Carversteak’s commitment to catering to diverse dietary preferences.

    “We know that our guests crave diversity in Carversteak’s menu, and this adds a whole new dimension to our offerings,” said Chef Ontiveros. “These dishes are not only flavorful and perfect for those with specific tastes, but they’re also fun to create. I love the opportunity to try new things in the kitchen and bring something truly inspired to the dinner table.”

    A Diverse Array of Vegan Delights

    The new vegan menu at Carversteak offers a variety of appetizers, entrées, and sides. Highlights include:

    Appetizers

    • Market Salad: Salanova Lettuce, Heirloom Tomato, Basil, Green Goddess Dressing
    • “Calamari”: King Trumpet Mushroom, Sweet Peppers, Tomato Sauce
    • Shishito Peppers: Lime, Chili Flake, Tofu Aioli
    • Chilled Tomato Gazpacho: Strawberry, Almonds, Aged Sherry Vinegar
    • Chickpea Fries: Cilantro, Jalapeno Lime Dip

    Entrées

    • Semolina Pasta: House Made Gemelli, Pomodoro, Summer Squash, Garden Basil
    • Vegan Chop: Organic Grains & Legumes, Broccolini, Roasted Tomato, Chimichurri Binchotan

    This innovative vegan menu complements Carversteak’s celebrated wine menu, a two-time winner of Wine Spectator’s Best of Award of Excellence in 2023 and 2024.
