Restaurateur Pinky Cole-Hayes Takes Over The Boujee Southerner in Atlanta

The Black-owned plant-based eatery will reopen as Bar Vegan's second location.

Pinky Cole-Hayes, the powerhouse behind Slutty Vegan and Bar Vegan, has taken over The Boujee Southerner, a Black-owned vegan restaurant that recently closed its doors. This exciting acquisition comes as Cole-Hayes transforms the eatery into her second Bar Vegan location. Known for its unique cocktail bar experience, Bar Vegan first launched in February 2021 at Atlanta’s Ponce City Market.

“When I heard about everything that they [The Boujee Southerner] were going through, I felt the need to step in,” said Cole-Hayes. “Their foundation is built on being a completely plant-based Southern Fusion concept that provides comfort food, which is right up our alley.”

A Full-Circle Moment for Former Owner Tara Gilbert

Tara Gilbert, owner of The Boujee Southerner and a long-time raw vegan, faced challenges that led to reducing business hours and ultimately closing down. In an inspiring turn of events, Gilbert will now serve as Executive Chef at Bar Vegan Lawrenceville, fulfilling a full-circle moment of inspiration and collaboration with Cole-Hayes.

Cole-Hayes said, “This is a part of my Restaurant Takeover initiative, where Slutty Vegan or Bar Vegan will take over the lease for existing restaurants that are looking to increase their foot traffic and awareness to the public. It’s all about collaboration and empowering one another.”

Bar Vegan Lawrenceville’s menu promises to tantalize taste buds with dishes like General Tso Chik’n, White Spaghetti, Maple-Glazed Brussels Sprouts, Loaded Fries, Corn Ribs, Jerk Kabobs, Lemon Pepper Chik’n Salad, and more.

Gilbert said, “With the menu, we plan to make it leaner, healthier, and sexier. We plan to make the food extremely yummy but also appealing to the eyes—so get prepared to snap your photos for social media."
