    I recently had the pleasure of dining at Judy's Sichuan Cuisine, a gem in the heart of Raleigh. The Dry Pot Pork Intestine and Fermented Tofu Water Spinach were the stars of the show, while the Hot Pepper Potato Shreds were just okay. I'd suggest skipping the Mouthwatering Chicken, though.

    The appetizers, particularly the steamed wonton with chili oil and steamed vegetable dumplings, were a delight. The wontons were a crowd-pleaser, perfect for sharing, and the dumplings, when paired with the sauce, were a flavor explosion. The twice-cooked pork was another standout, absolutely delicious and cooked to perfection.

    But the real surprise was the water spinach dish. It was so flavorful, it could turn anyone into a veggie lover! The Scallion Pancakes were a perfect balance of flaky, crispy, and soft. The Salt and Pepper Shrimp was a fitting end to the meal, leaving me satisfied yet craving for more. The restaurant's focus on Chinese cuisine rather than 'Asian in general' really pays off, and the giant lazy Susan in the center of the table made sharing a breeze. The atmosphere was great and the customer service was top-notch. Can't wait to return to Judy's!
