    With Summer here, you may be searching for things that bring to a barbeque. For me, nothing says spring quite like a freshly baked cake. Luckily, this cake is not only easy to make, but it is also incredibly delicious. This cake is rich and buttery, with a delightful lemon glaze topping and a lemony flavor throughout. You can make this cake ahead of time and freeze it when your company comes or your lemon sweet tooth is craving something sweet and lemony.

    Ingredients:

    4 eggs

    1 1/3 cup of granulated sugar

    1 pinch of salt

    Zest of 3 fresh lemons

    6 tablespoons of butter

    1/4 cup of sour cream

    1/4 cup of milk

    1 3/4 cup of all purpose flour

    1 teaspoon of baking powder

    GLAZE.... 1 cup of powder sugar 1/4 cup of lemon juice


    When preparing this cake batter, it's important to avoid over-mixing. You should only mix the batter until the ingredients are well combined.


    Ready to make?

    Preheat the oven to 350°F. Spray the pan with cooking oil to prevent sticking. In a large mixing bowl, whisk together the egg, sugar, and salt until smooth. To prepare the cake batter, first add lemon zest and melted butter to the egg and sugar mixture. Mix until well combined. In a separate bowl, mix together the flour and baking powder. Then, gradually add the flour mixture to the egg and sugar mixture, stirring until well combined.

    Next, mix the sour cream and milk together until smooth. Add this mixture to the batter and stir with a wooden spoon until the batter is smooth. Pour the batter into a prepared pan and bake at 350° for approximately an hour, or until the cake is fully baked. Allow the cake to cool completely before adding the glaze.

    For the glaze, you can use a combination of powdered sugar and your preferred liquid (such as milk or lemon juice). Slowly pour the glaze over the cooled cake, allowing it to seep into the cake before serving.
