    Taco cornbread casserole

    Cornbread and tacos are both favorites in my family, but have you ever tried combining the two? Trust me, it's an amazing and delicious combination! Here's a simple and budget-friendly recipe that your children could help you with. Instead of using a pound and a half of ground meat, you can try adding a bag of frozen corn or a can of corn to the meat mixture to save some money.

    Ingredients:

    1 box of jiffy corn bread mix

    1 1/2 pounds of ground meat

    1 onion diced

    1 package of taco seasoning

    1 can of enchilada sauce

    1 bag of grated Mexican cheese or pepper jack cheese

    Ready to make?

    To start, mix your jiffy box according to the provided directions. Before baking your cornbread mix in the casserole dish, make sure to grease the pan to prevent sticking. Preheat your oven to 450°F and bake the cornbread for about 20 minutes until golden brown and cooked through. After cooking the cornbread, use a fork to poke tiny holes in it. This will help the enchilada sauce to seep into the mixture. Pour half of the sauce on top of the cornbread mixture and spread it evenly.

    Now, cook the onions and ground meat until it's no longer pink. Be careful not to overcook it, and drain any excess oil from the pan. Add your taco seasoning and mix with ground meat. Next, place the cooked ground meat on top of the baked cornmeal mixture. Pour the other 1/2 the can of enchilada sauce on top. Top with cheese of your choice.

    Bake for approximately 10 to 15 minutes until the cheese is bubbly.

    You can customize your order by adding lettuce, tomato, and onion on top of your plate. Additionally, you can opt to add a dollop of sour cream for extra flavor.
